Add the banana, egg whites, Dukes shake powder, baking powder, and oat flour into a blender.
Blend until completely smooth. The batter should be thick but pourable. If it’s too thick, add 1–2 tablespoons of water and blend again.
Heat a non-stick pan over medium-low heat. Lightly spray with oil if needed.
Pour small rounds of batter into the pan (this mixture makes 2–3 pancakes).
Cook for 2–3 minutes, or until bubbles form on the surface and the edges look set.
Flip gently and cook for another 1–2 minutes until golden and cooked through.
Place the frozen berries in a microwave-safe bowl.
Microwave for 30–60 seconds until soft and juicy. Stir to create a simple compote.
Stack your pancakes. Spoon over the warm berry compote. Top with whipped cream and a light drizzle of maple syrup if desired.
