Mexican Loaded Potatoes

Steps
Preheat oven to 200°C.
Wrap potatoes in foil and roast for 45 minutes to 1 hour.
While potatoes roast, dice up all vegetables.
Season mince with salt, pepper and taco seasoning.
Cook mince until browned, then add vegetables and remaining taco seasoning to the pan.
Cook until fragrant.
Add in crushed tomatoes and corn.
Cook on a medium heat and let simmer for about 5 minutes.
Once potatoes are done, unwrap and cut in half.
Add mince and vegetable mixture on top of the potatoes.
Top with cheese and coriander.
Store in airtight containers for up to 4 days refrigerated.
